- 1 teaspoon salt, or to taste
- A few grindings of black or white pepper (optional)
- 3/4 cup very fresh olive, canola, safflower, or vegetable oil
Note: the addition of mustard not only enhances the flavor, it helps emulsify the dressing (gets the oil and vinegar to combine — which they do not want to do) and to keep it from separating later. However, you may omit the mustard, as well as substitute a coarse grain mustard.
How do I store DIY salad dressing?
Once you make the salad dressing from scratch, you can easily store it in the fridge until you are ready to eat. The best way to store dressing is in an airtight container, and for the best results, be sure to consume within the timeframes listed on the recipes above.
I always give my dressing a stir or shake before using it as well, just in case some things have settled while being stored.

Can I freeze salad dressing?
I don’t recommend freezing salad dressings because the ingredients tend to thaw in a way that doesn’t create a good consistency. For the best flavor, use fresh.
