Eating out can be expensive, but so many restaurant quality meals can be made at home. Not only will you spend less money, but you’ll also be using fresh ingredients from your own kitchen.
Often, the recipe will be as close to an exact match. Sometimes, you may have to take a few liberties to make the recipe work for the home cook and therefore the recipe may not be the exact, but it will be pretty darn close. You may have to alter ingredients or equipment to which a home cook has access. Or make some changes to make the recipe easier/faster for a busy home cook. I don’t know about you, but I’d much rather make a cookie taste close to the original in six steps, than exactly like the original in 24 steps. But that’s just me.
A couple of years ago on a business trip I was at an airport grabbing breakfast before a flight. I saw a Wolfgang Puck Express and thought the Breakfast Pizza sounded interesting, and I could eat it while sitting on a plane. WOW, the fact that I still think about it to this day should be a clue to how yummy it was. I’ve been meaning to give it a try ever since, and this weekend I finally did. And was my family glad I did!
Breakfast Pizza
- 3 sandwich thins (I used Arnold)
- 8 eggs
- 3 slices American cheese, loosely torn into pieces or sliced
- 7 slices bacon, cooked and chopped or crumbled
- 2 tablespoons caramelized onions, chopped
- 1/2 medium tomato, chopped
- 2 Tablespoons shredded cheddar cheese
- Ranch dressing
- Heat oven to 375.
- Separate thins into halves (so you now have 6 halves). Toast them and then place onto baking sheet.
- Heat a medium-sized non-stick skillet over medium-low heat.
- In a medium bowl beat eggs until well mixed. Add to skillet when hot. As eggs cook, gently stir often them with a rubber spatula.
- Once eggs look almost set, stir in American cheese, bacon, and onions. Once melted, gently spoon an equal amount onto each open sandwich thin half. Sprinkle cheddar cheese and tomatoes on top, dividing them equally among the pizzas.
- Place cookie sheet into preheated oven. Bake about 5 minutes, just until cheese on top melts.
- Before serving, drizzle each with a small amount of ranch dressing.
- If I recall, the original pizza was on a small, real pizza crust. And while I may give that a try, for a usual morning, that’s not something I have time for, so I swapped in the sandwich flat and it worked great.
- I cooked my bacon in the oven for easier clean up and so I didn’t have to keep watching it. I line a baking sheet with foil, then put a baking rack on top. Bake at 350-375 for about 12-18 minutes, depends on how much you like your bacon done.
